Gary Taubes is an investigative science and health journalist and co-founder of the non-profit Nutrition Science Initiative (NuSI.org). He is the author of Rethinking Diabetes (2024), The Case Against Sugar (2016), Why We Get Fat and What to Do About It (2011) and Good Calories, Bad Calories (2007), published as The Diet Delusion in the UK. Taubes is the recipient of a Robert Wood Johnson Foundation Investigator Award in Health Policy Research, and has won numerous other awards for his journalism. These include the International Health Reporting Award from the Pan American Health Organization and the National Association of Science Writers Science in Society Journalism Award, which he won in 1996, 1999 and 2001. I have always wanted to be in a helping profession and I picked Nutrition back when it was still pretty much in the infancy of its scientific development. Unfortunately for me, the cutting-edge scientific knowledge of the day (early-mid 80’s) was decidedly aimed at low fat, low cholesterol interventions being the savior of us all. How we went so dramatically wrong is the subject of many books, articles, podcasts and videos, but the medical establishment, like the Titanic, takes time to turn around.
I, on the other hand, can turn on a dime, and so I decided to establish a private practice and wellness coaching service that focuses on taking control of our lives and our health, using real foods and a low carbohydrate, high healthy fat approach.
I have been a Registered Dietitian for over 35 years, but in 2016, I added to that knowledge base by completing the Primal Health Coach Certification, an in-depth course that explores all the facets of a lifestyle based on Ancestral Health principles. The changes that can be experienced by using this lower carb, high fat, whole foods-based approach are nothing short of spectacular and I have a passion to share these strategies with others. After three decades of being only marginally successful at helping others to improve their health, I now have the knowledge and tools to transform my client’s lives – and I am seeing it every day.
I live my life focusing on the three main components of health. The first is Nutrition or Nourishment, how we choose to fuel our wondrous physical body. The second is Movement, otherwise known as Activity or Exercise, but those terms are rather limiting. The third is Spirit, taking care of our emotions, our thoughts, our approach to rest, sleep, and stress management. All of these parts contribute to overall health. And all are addressed in the programs of my practice.

Nicholas Timpson’s research focuses on the application of genetic epidemiology to the dissection of potentially causal relationships between modifiable risk factors and complex health outcomes. His programmatic work specifically focuses on understanding body mass index (BMI) as a risk factor - using a variety of study designs and molecular phenotyping to examine pathways to disease and intervention effects. He leads work applying these methods to questions on the aetiology of cancer, cardiovascular health and the role of the environment in cardiometabolic health.

Vinnie Tortorich, born Vincent J. Tortorich, is an American businessman, author, podcaster, and health and fitness expert who promotes the 'no sugar no grains' (NSNG) lifestyle, a Low-carbohydrate diet way of eating. While earning a degree in Health, Physical Education and Nutrition from Tulane University, Vinnie was hired, as an undergraduate, to teach the university’s first Strength and Conditioning course. His reputation as an inspiring teacher and strong leader grew, and he became Strength and Conditioning coach for the Newman School where he coached, among others, the Manning brothers, Cooper and Peyton.
After moving to Los Angeles where he became a "trainer to the stars,"Tortorich began a podcast around 2012 called the Angriest Trainer Podcast. Dr Mathilde Touvier is a Research Director at Inserm and principal investigator of the NutriNet-Santé cohort. She is a graduate of AgroParisTech and Doctor in Epidemiology and Public Health. After six years at the French Agency for Food, Environmental and Occupational Health & Safety (ANSES) and one year as a visiting researcher at Imperial College London, she joined the Nutritional Epidemiology Research Team EREN (U1153 Inserm / Inrae / Cnam / Sorbonne Paris Nord University), of which she became Director in 2019. She coordinates research on the links between nutrition and health (e.g. PI of a European Research Council ERC Consolidator Grant 2020-2025 on the impact of industrial food, food additives and food processing on health), with >370 publications in this field. She is expert in several workshops, e.g. at the French National Cancer Institute (INCa), the Ministry of Higher Education and Research (France 2030 ambassador), the international network Global Burden of Disease, and she is member of the Scientific Council of the International Agency for Research on Cancer (WHO-IARC). She received the Inserm Research Prize in 2019 and a prize from the Bettencourt-Schueller Foundation in 2021. She has been appointed Professor at the College de France in Public Health for 2022-2023.
Dr. Tregellas is a Professor at the University of Colorado School of Medicine Department of Psychiatry, where he is Director of the Anschutz Medical Campus Brain Imaging Center. He is also a VA Research Career Scientist at the Rocky Mountain Regional VA Medical Center. Dr. Tregellas’ research career has focused on understanding the neurobiology of disorders such as schizophrenia, and on processes related to food intake behaviors and obesity.
